Gluten Free Wild Rice Stuffing


1 cup wild rice
2 cups broth
1 shallot, chopped
1 celery root, chopped
1 apple, chopped
juice of 1 orange
fresh sage, rosemary & orange zest (to taste)
handful of walnuts & cranberries
sea salt & pepper
Cointreau (optional)


Bring 2 cups of broth to a boil. Add rice and simmer for apx. 45 minutes. Meanwhile, sauté shallot, celery root & apple over med-high heat for 5 minutes. Sprinkle with salt & pepper, add herbs, orange juice, nuts & cranberries, add a splash of Cointreau if you have it, then sauté for another 5-10 minutes, stirring frequently until browned. Take off the heat and add cooked wild rice (drain rice first if there’s still moisture in the bottom of the pan) and orange zest. Enjoy as a main or side dish!
