Salmon with Tarragon Lime Butter

(inspired by Gourmet Magazine)


2 lbs. salmon tails (tails have little to no bones)
sea salt & pepper

Tarragon Lime Butter

4-6 TBS butter
2-3 cloves garlic (finely chopped)
2 TBS honey or maple syrup
juice of 1 lime
sprig of tarragon (finely chopped)
sea salt


Sear salmon tails apx. 4-5 min per side until nicely browned.
Meanwhile, melt the butter in a small pan, then take off heat and add all the other ingredients. Mix well and pour over salmon. Cover the salmon and cook in the butter for 4-6 minutes longer- depending on how well done you like your fish. Take off of the heat, leave covered for a few more minutes before serving.
