My dad and brother make the best guacamole I’ve ever had. Of course it’s only famous in our family, but while we were in Mazatlan I got my dad to share his recipe with all of you! I love it over quesadillas filled with Manchego and feta cheese. Here are the recipes.
DAD’S FAMOUS GUACAMOLE
2 super soft, but still green avocados
2 TBS chopped onion
1/2 lime, juiced
1/2 cup Pico de gallo (or chopped tomato, onion, cilantro & peppers- salted)
2 cloves crushed garlic
salt to taste
Combine all ingredients thoroughly.
Place a corn tortilla on a hot stove. Layer on some shredded manchego and feta cheese, then top with another tortilla. Fry until both sides are brown and cheeses are melted and stuck together. Top each quesadilla with the guacamole and more feta. Add a sprig or two of cilantro for a garnish if you like.
