olive oil
juice of 1-2 limes
2 green onions, thinly sliced
salt & pepper

Marinate your Mahi fillets for about 15 minutes in a bowl on the counter top before frying them. Then, without adding oil to the pan, fry the marinaded Mahi 5-6 minutes on each side over med-high heat. The fillets and the sliced green onion will brown. Take fish off heat and cover with foil for 5 minutes to keep it moist. Finally, place it on a dish and serve with a sprinkling of cilantro. The fish will be succulently juicy and tender.
