Vegan Chocolate Coconut Truffles

VEGAN CHOCOLATE COCONUT TRUFFLES
(makes 24 tsp-sized truffles)

3 cups unsweetened, shredded coconut
1/2 cup powdered sugar
1/2 cup sweetened condensed coconut milk
1/4 cup coconut oil, melted
2 dashes salt
1 1/2-2 cups milk chocolate chips, melted

Combine coconut & sugar into a LG bowl. Mix in milk and coconut oil until you can form it into balls. Freeze the coconut balls for 15-20 min. While freezing, melt chocolate chips in a double-broiler, then dip the frozen coconut balls into the hot melted chocolate.

Refrigerate for another 15-20 minutes before eating!

SWEETENED CONDENSED COCONUT MILK
1/2 cup coconut milk, canned
1/2 cup honey

Pour ingredients into a small pan. Reduce the liquid down until it becomes the consistency of regular condensed milk.
